I made The World's Greatest Soup last night. It wasn't at all what it was supposed to be (it was supposed to taste North African, for instance, and it was more of a South Asian/European fusion), but it was still excellent.
Peanut soup without peanuts:
- either chicken or fauxchicken (I used the organic/free range stuff I bought last weekend - I'm adding some meat back into my diet cause I was starting to feel cruddy)
- maybe 4 tbsps cashew butter
- maybe 6-8 tbsps miso paste
- splish of white wine
- splish of lime juice
- lots of fresh cilantro
- lots of garlic
- lots of ginger
- itty wee bit of anise
- itty wee bit of nutmeg
- itty wee bit of pepper
- veggies (I used fresh kale, green onion, edamame, thinly sliced mushrooms & baby carrots)
- water (cause almost none of the rest of this is liquid, though you could have just used veggie broth & skipped the miso)
You cook the chicken in the wine & lime juice in a big soup pot (hot), adding garlic & ginger. Then you slowly start adding everything else & stirring a lot (still on high heat), till the broth tastes good. Once the broth is mixed, heat on medium to low heat for maybe 15 minutes.
It was so good. I had it for dinner last night and for lunch today (I almost never eat leftovers right away).
