comfort vegetable
Nov. 16th, 2009 10:14 pmCauliflower is a comfort vegetable! I always knew this about broccoli, but it turns out they're related in more ways than taxonomy. Cauliflower makes excellent gratins and casseroles. Nom.
I had a moment today where I realized I just wasn't acting like the person I want to be. Man, that was depressing. So I came home and made what we'll call Try to Be Less of an Ass Next Time Cauliflower. It was pretty awesome. Self-awareness is easier if it's yummy.
It's very easy. Assemble the following in a casserole dish of a size you like. I have this little two-serving dish that keeps me from wasting food. I used this as a side dish, but next time I might add a green vegetable and some rice and declare it a wintery casserole.
- Cauliflower, separated into florets
- Butter, enough that there's a dollop every inch or so on top of your cauliflower [I really enjoy typing "cauliflower".]
- A soft cheese, dolloped in between the butter dollops [And now "dollop" is a verb. So it begins.] I used a mild goat cheese, because that's what I had, but a ricotta or even cottage cheese would work, if that's what you have. This is partly for taste and partly for texture, and partly because dairy products are like getting reassuringly patted on the head, as long as you're not vegan. Or lactose intolerant. This could probably be made vegan with substitutions.
- Milk, enough to cover most of the cauliflower [This may be the most fun I've ever had typing a recipe. Cauliflower! Cauliflower!]
- A layer of breading. I used panko with macnuts in it, since again - that's what I had - but you could use anything bready. It's just to give the top some crunch.
- A layer of grated cheese. You want something that does a nice cheesy melt.
- And add, you know, whatever spice you like. I used a teeny bit of cumin and some ground pepper. The panko had something in it, too, and the butter was all shallot-ish.
Put in oven. I cooked it at 425F for about 25 minutes, but I also never preheat ovens unless I'm seriously baking (a thing I rarely do, since this is my idea of a recipe); your time and temperature may vary.
Eat. Enjoy. Do better next time.
